Night harvest of selected plots that are cultivated according to the precepts of organic agriculture. Maceration during 6 to 12 hours. Static settling. Fermentation at low and controlled temperature (14-16°C). Maturing on fine lees.
Pale and brilliant yellow robe. Discreet nose with flower flavours. Dominant notes of pear. In mouth, the soil expresses with balance between minerality and floral aromas all in finesse, without any expensiveness. Good balance in the length of mouth.
To be served fresh (16°C-18°C). It will be a great companion for salted pie or roasted red mullet.
