Carefully selected small plots located on the stony and clayey-chalky slopes of the Luberon massif, giving naturally low yields (38 hl / ha).
70 % Syrah, 30 % Grenache noir.
The grapes are harvested between late September and early October. Fermentation at controlled temperature (23°C). Long maceration between 15 and 28 days. Soft extraction.Free-run juice only. 20% elevated in barrels during 6 months.
A dark robe with purple tints, typical of an intense concentration. The nose is fine
and elegant and delicate and shows notes of red fruits (blueberry and blackcurrant) with notes of vanilla and cinnamon. The mouth is concentrate and well- balanced, with fine liquorice, violet and red fruits flavours, mixed with a very fine oaky side and long silky tannins.
Best served at 18°C. You will enjoy it with a veal fillet game or a matured cheese. A wine for ageing.
