80% Chardonnay, 20% Viognier.
The grapes are harvested during the night : early September for the Chardonnay and mid-September for the Viognier. For each grape variety, skin contact maceration during 6 to 12 hours at low temperatures (<16°C) to reveal the complexity of their aromas and give fatness . Alcoholic fermentation done at 14°C-16°C, then ageing on the fine lees.
Clear and brilliant yellow gold robe. This blend offers an attractive and very aromatic nose : Viognier brings white flowers, peach, apricot and exotic fruits aromas, Chardonnay brings structure and fat alongside yellow peach and tropical fruits aromas. A very harmonious and fine wine.
Best served chilled between 10°C and 12°C. A perfect aperitif and match with all fish dishes, vegetable terrines, goat cheese, or Mediterranean dish. To drink within two years.
