The plots are oriented South, between 300 and 500 meters of altitude. The Clairette grapes’ soil is made of clay and silt and the Roussanne soil is made of clay and limestone.
60% Clairette – 40% Roussanne
The harvest is done by night in order to keep the freshness and the minerality of the grapes. The parcels are cultivated according to the principles of Organic Farming.
The fermentation is made at controlled low temperature (14-16°C / 57-60°F).
The nose is intense, with beautiful notes of white flowers. On the palate, after a frank and mineral attack, flavors of citrus and especially candied lemon are revealed. The final is defined by delicious honey hints.
This wine will be a perfect match with a goat cheese or monkfish fillet with vegetables.
