Late harvest due to the plots exposure. Vinification between 18°C and 29°C maintains the aromatic freshness and makes silky and full profiles (maceration without extraction).Ageing in stainless steel after a meticulous racking and after a malolactic fermentation to mature the wine of fine lees.
Garnet-red colour. Complex nose of black fruits and tapenade. The mouth preserves a nice and fresh mineral structure and presents very delicate tannins at the same time.
Wine for ageing to drink with game or Provençal roasted pork.
